Le Gallais Domain is situated in the village of Boursault, just a few kilometers from Epernay. It was acquired by the family in 1927 and comprises seven plots, each with its own unique characteristics, overlooking the Marne Valley. The press, cellars, and winery are also located within the clos, only a few hundred meters away. This ensures excellent fruit freshness during the pressing and transformation process. The domain's richness lies not only in its buildings but also in its soil: limestone filtering properties combined with the freshness of the clay contribute to the balance of the terroir. Each plot is vinified separately to preserve its identity and aromatic uniqueness.
 
They adhere to sustainable practices, avoiding pesticides, holding the HVE label since 2020, and minimizing the use of sulphites. They also follow a slow winemaking approach, including hand harvesting and mechanical soil cultivation. Natural rhythms are respected in the wine's evolution. These choices allow the wine to express itself fully
